Put the bird’s carcass in a pot of water with an onion, celery, carrots, salt and garlic powder and cook down some chicken stock to be used in future meals.
Quick Rotisserie Curry Chicken Salad Recipe
Mix the following ingredients together in a bowl and chill:
- Rotisserie chicken, skinned and meat removed and chopped
- 1 stalk celery, finely chopped
- 1 cup almonds, sliced
- ½ cup Vidalia onion, finely chopped
- ½ cups chopped fresh grapes or dried dates
- ½ cup mayonnaise
- ½ cup plain yogurt or sour cream
- Juice of 1 – 2 lemons
- 1 – 2 tablespoons curry powder
- 2 tablespoons chopped fresh cilantro
- Salt and pepper to taste
Serve over greens or on fresh sourdough bread slices with chutney on the side.
Healthy Rotisserie Chicken, Vegetable and Orzo Pasta Recipe
Boil 16 ounces of orzo pasta while removing the skin and chopping three cups of meat from the rotisserie chicken. Toss the pasta, chicken and following ingredients:
- ½ cup sliced sundried tomatoes
- ½ cup chopped yellow bell pepper
- ½ cup sweet green peas
- ½ cup crumbled feta cheese
- ½ cup finely chopped purple onion
- 2 tablespoons extra virgin olive oil
- 4 – 6 tablespoons rice wine vinegar
- ½ cup fresh chopped basil
- Salt and pepper to taste
Serve this delicious, filling dish with a leafy green salad and some light dinner rolls.
Rotisserie Chicken Enchilada Casserole Recipe
This Mexican inspired chicken casserole is a quick and easy crowd pleaser. Serve it with sliced avocados, sour cream, extra salsa and fresh sprigs of cilantro and watch it disappear!
Ingredients:
- Shredded meat from a rotisserie chicken
- Flour tortillas
- Salsa – mild, medium or hot
- Can of black beans, drained
- Can of sweet corn kernels, drained
- Pepperjack cheese, shredded
- Cumin
Mix the chicken, beans, corn, ½ teaspoon of cumin and enough salsa to hold it together in a bowl. Spoon some of the mixture in a tortilla, roll it and place seam side down in a greased casserole dish. Repeat until the casserole is filled with enchiladas. Pour a cup of sale over the whole thing and then sprinkle the cheese on top. Bake in a 350 degree oven for 30 minutes and dinner is served.
